Guanaco tartare
The purest way to taste the local meat.
El Chaltén · Patagonia
A mountain bistro guided by Juan Ventureyra, Michelin-starred chef.
Our star ingredient
On the way to El Chaltén, Juan had to stop to let a herd cross. That is when he realised almost no one in town was cooking guanaco seriously: it is a very lean meat, hard to work with. He asked for two, spent a weekend trying out cuts, and LAMA was born.
Today we serve it as tartare, empanadas, burgers and braised shank. Fully traceable, from a licensed supplier.

Lama guanicoe
Our name comes from the guanaco's scientific name. Our logo, from the yellow road sign that warns of guanacos crossing as you drive into town. You will see it on the way in, you will see it again here, and when you leave, the sign will remind you of this table.
Executive chef
With a Michelin star and a Green Star at his restaurant in Mendoza, and Michelin recognition for Casa Palanti in Buenos Aires, Juan brings his vision to the produce of this land.
“LAMA is a mountain bistro. Simple and honest, for coming back from a hike and sitting down to a good meal.”
